Vin Chaud (French Mulled Wine)
Ingredients (Serves 4-6)
• 1 bottle red wine (a dry French wine like Côtes du Rhône or Bordeaux works well)
• 1/4 cup sugar (or honey for a natural sweetness)
• 1 orange (zest peeled in strips and juice reserved)
• 1 lemon (zest peeled in strips)
• 1 cinnamon stick
• 4 cloves
• 2 star anise pods
• 1/2 teaspoon ground ginger (or a small piece of fresh ginger, sliced)
• 1 vanilla bean, split (or 1 teaspoon pure vanilla extract)
• Optional: 4 tablespoons Cognac or Grand Marnier for added richness ( feel free to add more if you wish)
Instructions
1. Prepare the Citrus: Using a vegetable peeler, remove the zest from the orange and lemon in long strips, avoiding the bitter white pith. Juice the orange and set the juice aside.
2. Heat the Wine: In a large saucepan, pour the wine and gently warm it over low heat. Do not let it boil.
3. Add the Spices and Citrus: Add the sugar (or honey), orange juice, citrus zest strips, cinnamon stick, cloves, star anise, ginger, and vanilla bean (or extract). Stir well to dissolve the sugar.
4. Simmer and Infuse: Let the wine gently simmer on low heat for 20-30 minutes, stirring occasionally. This allows the flavors to meld beautifully.
5. Add Cognac (Optional): If using, stir in the Cognac or Grand Marnier for a luxurious touch.
6. Strain and Serve: Strain the mulled wine through a fine sieve to remove the spices and zest. Serve warm in heatproof glasses or mugs.
7. Garnish (Optional): Garnish with a slice of orange, a cinnamon stick, or a star anise pod or if you are serving this to a crowd, add orange slices, cranberries , sprigs of rosemary and pear halves for an absolutely gorgeous presentation.
