My First Cookie Exchange!
In all my years, I had yet to experience the joy of a Christmas cookie exchange. But this year, the stars aligned, and I found myself immersed in a delightful new tradition. My dear friend Kathleen, with her heart as warm as her hearth, welcomed us into her charming Victorian home, decked out in its festive best.
Each of us arrived, cradling bags filled with homemade cookies, their sweet aroma mingling with the scent of pine and cinnamon that wafted through the house. For the Cookies, (or in a pinch you can use these delightful chocolate wafers!)
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
For the Mint Filling:
- 2 cups confectioners' sugar (powdered sugar)
- 1/4 cup (1/2 stick) unsalted butter, softened
- 1/4 cup heavy cream
-1/2 teaspoon of vanilla extract
- 1/2 teaspoon peppermint extract
- Green food coloring (optional, for color)
Instruction: For the Cookies
1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
2. Add the egg and vanilla extract to the butter-sugar mixture. Beat until well combined.
3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
