Spicy Pumpkin & Sweet Potato Mousse🍂
This recipe is easy to make and really delicious!
I have an absolute passion for pumpkins and I’m always on the lookout for easy ways to enjoy this sunny and nutritious treasure. We were about to enjoy a spicy chili dinner, embellished with succulent chicken and butternut squash and suddenly I found myself yearning for something just a little bit sweet and spicy. In that magical moment, I created a dessert that turned out so splendidly, I've decided to make it for our Thanksgiving dinner this year! 🎃🍂
This simple, spicy pumpkin & sweet potato mousse is really delicious. Should you have a soy sensitivity, fear not; you can replace the tofu with bananas or avocados for a fruitier twist that remains utterly delicious.
Warning! Don’t play this unless you want it running through your head for a bit. (But it’s awfully cute!)
This is great fun for your children or grandchildren while you’re making this dessert…
To craft this delicious dessert, you'll need the following ingredients:
- 1 10 oz package of Silken tofu (Soft)
- 1 cup of Maple syrup
- 1 cup of canned Coconut cream (with extra in reserve, if needed)
- 1/2 tsp of ground Cinnamon
- 1/4 tsp of Ginger
- 1/4 tsp of Nutmeg
- 1/4 tsp of All Spice
- A pinch of Ground Cloves
- 2 tablespoons of sweetened cocoa
- A pinch of Salt
- 2 cups of canned pumpkin
- 1/2 cup of crushed raw pecans
- 2 tablespoons of spiced rum
- 1/4 tsp of high-quality vanilla extract
- 1 cup of roasted sweet potato (from 1 small sweet potato)
- 6 crushed Cinnamon Rugalach or Ginger Cookies
Simply gather these enchanting ingredients and place them into a high-speed blender. Blend until the mixture achieves a velvety smoothness, and if needed, introduce more coconut milk to reach your desired consistency. Pour this elixir into an exquisite crystal bowl, individual serving dishes, or a pie shell before allowing it to rest for awhile in the cool embrace of the refrigerator. Just before serving, crown each portion with a dollop of whipped cream or soy cream and a scattering of shaved chocolate—or my favorite Autumn topping for just about anything: "Magic Maple Crystals."
Magic Maple Crystals
Ingredients:
- 1/2 cup brown sugar
- 1/4 cup maple sugar
- 1 tablespoon Vietnamese cinnamon (ground)
*Instructions:*
1. Begin by ensuring that your spices and sugars are dry and free of any clumps. Fresh and finely ground ingredients work best for this magical blend.
2. In a clean, dry coffee grinder or spice grinder, combine 1/2 cup of brown sugar, 1/4 cup of maple sugar, and 1 tablespoon of Vietnamese cinnamon.
3. Secure the lid tightly on your grinder, and pulse the mixture until all the ingredients are thoroughly combined and powdered finely. This should take just a few seconds of pulsing.
4. Carefully open the lid, allowing any dust to settle before removing it. Be cautious, as the fine powder may become airborne.
5. With a small spatula or spoon, transfer your Magic Maple Crystals into an airtight container. A glass jar or spice container works wonderfully.
6. Seal the container and store your Magic Maple Crystals in a cool, dry place away from direct sunlight.
